Hardcore accounting principles for US restaurants

Lets get the easy bit out of the way. This is NOT
- a memoir about someone's time working in a kitchen (Bourdain for the rough edge Kitchen Confidential Updated Edition: Adventures in the Culinary Underbelly (P.S.), or Achatz' Life, on the Line: A Chef's Story of Chasing Greatness, Facing Death, and Redefining the Way We Eat for the esthetic side , )
- a book detailing how service should be delivered ('... the knife should then be placed 1" in from the edge of the table...' etc aka what Professional Table Service covers ad nauseam )
- a book covering people management in the biz as well as the industry (look at the Taffer book Raise the Bar: An Action-Based Method for Maximum Customer Reactions and Spike TV series for that or Restaurant Owners Uncorked Restaurant Owners Uncorked: Twenty Owners Share Their Recipes for Success)

This is a detailed look at how a restaurant can be run by the numbers. it presumes a level of basic math plus would like you to have some clue of accounting principles. Frankly if you are looking to run a bar/ restaurant and DONT have a clue about the ratio's you should be achieving (and thus where you should see profit(!) find and fix losses) , get your head around this book. Whilst the number side are NOT an easy read for everyone, the long term advantages to your bank balance can't be understated. And again, even if you have a part time bookkeeper, you MUST know what questions to ask and how to drill down in the figures they create for you!

P.S. Fields' Restaurant Success by the Numbers: A Money-Guy's Guide to Opening the Next Hot Spot is another view of how to understand the figures. personally I'd suggest that as an introduction, but would STRONGLY suggest you use the chart of accounts (COA) and number layouts given in the USAR over Fields' version

buying this book is a good step in the right direction

Essential if you're a restauranteur or intend on becoming one.

Due to the nature of the business, slight differences in margins can add up substantially. It's important to know what you're talking about when you sit down with your accountant.

About the Author
Fred S. Kleiner (Ph.D., Columbia University) is the author or co-author of the 10th, 11th, 12th, 13th, 14th, and 15th editions of GARDNER'S ART THROUGH THE AGES: A GLOBAL HISTORY, as well as the 1st, 2nd, and 3rd editions of GARDNER'S ART THROUGH THE AGES: A CONCISE HISTORY, and more than 100 publications on Greek and Roman art and architecture, including A HISTORY OF ROMAN ART, also published by Cengage. He has taught the art history survey course for more than three decades, first at the University of Virginia and, since 1978, at Boston University, where he is currently professor of art history and archaeology. From 1985 to 1998, he was editor-in-chief of the American Journal of Archaeology. Long acclaimed for his inspiring lectures and dedication to students, Professor Kleiner won Boston University's Metcalf Award for Excellence in Teaching, as well as the College Prize for Undergraduate Advising in the Humanities in 2002, and he is a two-time winner of the Distinguished Teaching Prize in the College of Arts and Sciences Honors Program. In 2007, he was elected fellow of the Society of Antiquaries of London, and, in 2009, in recognition of lifetime achievement in publication and teaching, fellow of the Text and Academic Authors Association.

SHODDY IMAGES, for an art history textbook.

DO NOT BUY! This is an art history text, which for some would mean the images are arguably the most important part, and on this version they are absolute crap. Every image in this book is so contrasty you can't make out any of the subject matter in the mass of black the dark areas have become, and further, none of them are high enough quality to zoom your screen in on for a better look.
I've attached images of the painting used for the book's cover as it appears in the text, as an example of how dark and low resolution the images are.

I can't believe this is a textbook. No one can see anything the text describes in these terrible low resolution photographs. At these prices? And it's a requirement for the class. The publisher should be embarrassed.

I loved this book, It's great, and has so many of the chapters that I needed for my Art History Class. The only thing is that it's thick and it's quite heavy. But, other than that, it's exactly what I needed.

In this global process one key person that is needed is a Freight Broker and his or her service. Freight Brokerage firms are more in demand now than ever before.

My name is George A. Stewart, I am 43 years old, I worked 12 years as a store manager for Burger King Restaurant, a truly dead end job. Just like most jobs in the market today I used to put in plenty of hours that unfortunately, did not translate into money. I understand that everyone has bad days at work; for me it was not an ordinary occasional dissatisfaction but a genuine mismatch. Working for long hours and under constant stress was taking a toll on my health and to make matters worse I was earning $36,500 per year, which was barely enough to feed myself, my wife and three children. Most of the time, I felt like I was dangling from a cliff. My turning point was the day I met a certain customer in my restaurant who seemed to be doing very well despite the hard economic times the whole country was going through. After a little chitchat, I found out he was a freight broker and that he was earning a decent living while working a few hours.

At that point I did not know anything about freight brokerage or that a profession like that even existed. I therefore decided to do some research about it and the more I learned the more my interest grew and within a matter of weeks I was completely hooked up. Before I knew it, I took time off work to begin my training in freight brokerage.

After my training, I decided to quit my job at burger king and took up a job as a freight agent working under an established freight broker. My job included looking for new clients, taking orders and matching shippers with carriers. In one year or so I felt that I had enough experience and contacts to start my own firm. I then applied for the required licenses at FMCSA and started small.

Starting my own firm was definitely not easy but I found it much better than working at Burger King. My first client was a contact I had made from working as a freight agent. After a lot of hard work I finally started getting more clients, and in 6 months I could finally relax because my business had finally taken off. I was earning around $120,000 every year, which, I must confess, was really good for starters.

Now that I can work for fewer hours per day, my stress level has gone down and health wise, I am on the road to recovery. I can take better care of my family and also spend a lot more time with them. In this book, I outlined every steps about How to become a successful Freight Broker that anyone can understand and follow.

Very Very Basic

I've spent 14 years in the transportation industry, 3 years as a broker/agent. This book covers the basics but not near enough info to go out and open your own brokerage for sure. It offers the nuts and bolts but there is ALOT more to it than what is written in these 74 pages.

Believe me when I say OJT is the best way to learn this business, not a book. This book offers some generic information and suggestions about the business otherwise it would be as thick as an encyclopedia. Can you make money as a freight broker or agent? Absolutely. Is it easy? Absolutely not. You have to pay your dues like anything else worthwhile but if you have thick skin and persistence like the author says the sky is the limit.

The author mentions in page 7 once he did his research on the freight industry he went for broker training and off he went. He never mentions where he went for this training. His mention as a mgr at Burger King for $36,500/yr before getting into brokering was all of one paragraph and never brought up again so the book sub-title 'My Journey from a Fast Food Mgr to Freight Broker' really wasn't any 'journey' in the book.

Almost word-for-word I noticed some pages described the freight broker business just exactly as Entrepreneur Magazine described in their manual How to Start a Freight Broker business. Coincidence? Highly doubtful.

The transportation industry has it's own 'lingo'. If you can't speak the language or have any idea what a trucker is talking about when he says he's bob-tailing or he's over on his tandems you'll have a difficult time in this business until you're familiar with alot of the terminology. How much weight can a trucker legally have on his tandems do you know? Or on his steering axle? If you're clueless about this industry and have absolutely no knowledge about it, you certainly won't learn it from this book, or any other book.

The author says in this book he has a website / blog (which he lists) that he provides additional info and updates on. But when I checked it out, it was incomplete and had only one posting total, updated in July 2013. I'm sure he had good intentions but he dropped the ball there. If he's THAT busy he could get a virtual secretary or a high school student for that matter to relay an occasional audio update for his blog and convert it to text so it at least looks more professional and is more current.

Overall, this book is really nonsense for someone not familiar whatsoever with the transportation industry. You can find out just about all you need to know on the web if you drill deep enough just like this author did and just copied it all and put it into a book. OJT is the only way you'll learn this business, not from some vague book. The author has been fortunate to be in the top 10% in income as a freight broker - if he's telling the truth- and I applaud him for making it a successful career transition from managing a Burger King.

One thing I noticed about this book is that it's almost word-for-word written from various exerpts about the freight business found elsewhere online. All the author did was gather the info and put it into this book. Nothing new whatsoever here that you can't find for free online if you're willing to browse around a bit. I really didn't learn anything new here. It's a very broad outline written about how to get into the freight brokerage business and unless you have knowledge of the transportation business in some shape it'll be a tough go regardless how easy the author makes it sound in this book. And the website he says he keeps updated in this book...lame. It hasn't been updated since summer of 2013 and then only has 1 entry. Deserves 1.5 stars but I was feeling generous and gave this book 2 stars. IMO I'd pass on this book if you're seriously interested in the freight brokerage business.

The US Depreciation guide is the second most important book a tax professional must have, right behind the US Master Tax Guide. However, unlike the Tax Guide, you can get away with purchasing a depreciation guide a year or two out of date to save money.

depreciation is nasty at best

This big thick book has all the details on an often complicated subject, depreciation. Our company doesn't even have a wide variety of assets, but this book has a ton of information in it and is a solid go to reference. Can't do without it!

About the Author
In his head, Jason Parent lives in many places, but in the real world, he calls Southeastern Massachusetts his home. The region offers an abundance of settings for his writing and many wonderful places in which to write them. He currently resides with his cuddly corgi, Calypso. In a prior life, Jason spent most of his time in front of a judge… as a civil litigator. When he tired of Latin phrases no one knew how to pronounce and explaining to people that real lawsuits are not started, tried, and finalized within the 60-minute time-frame they see on TV, he traded in his cheap suits for flip-flops and designer stubble. The flops got repossessed the next day, and he’s back in the legal field… sorta. But that’s another story. When he’s not working, Jason likes to kayak, catch a movie, travel any place that will let him enter, and play just about any sport (except for the one with that ball tied to the pole thing where you basically just whack the ball until it twists in a knot or takes somebody’s head off). And read and write, of course. He does that too sometimes.

You must have this on your shelf!

A copy of Seeing Evil was sent to Confessions of a Reviewer by the author Jason Parent in exchange for an honest review. This is said review. This book is published by Red Adept Publishing.

I have not read a lot by Jason Parent, just his stories as part of the mighty crew that gave us the collections, Dead Roses: Five Dark Tales of Twisted Love and Bad Apples: Five Slices of Halloween Horror. I have known him for a while now and have to say he is a decent bloke. I admit to that solely for the purposes of this review. I want it made quite clear that even though I do know him, he is also quite clear that garners no favours when I review books. He knows that I am honest about what I read, no matter who wrote it.

To that end I have to say I was hugely disappointed with what I read in Seeing Evil. Read on and I will tell you why.

Sam Reilly is a detective in the Major Crimes Division. She isn’t exactly orthodox and has a bit of a reputation as being somewhat of a maverick. She is sent to a gruesome murder/suicide where she comes across a small child sitting on the floor in the middle of a pool of blood. His family has been killed in the crime.

The child was Michael Turcotte. 11 years later, he has been in and out of various foster homes, struggling with growing up in a system that sometimes doesn’t care. His only true friend is Sam. She has stuck by him during the years since his family was murdered.

Michael has a secret. It’s so secret he has just discovered it himself. He has visions. Visions of things that are going to happen to anyone that he touches, flesh to flesh. He truly sees evil. When he tells people and Sam about his first vision, they don’t believe him. When it comes true and someone dies, Sam starts to listen to anything Michael tells her.

Tessa Masterton also has a secret. A secret life that no one but her and her father know about. She has heard about Michael’s visions and approaches him to see if he can tell her what her future holds. What Michael sees is something he cannot possibly tell Tessa. He tells Sam though.

What unfolds is a race against time, a race against evil and a race to stop a cold and ruthless killer that won’t let anyone stand in his way. That includes Sam, Michael and Tessa.

So I said earlier I was hugely disappointed. I was. I was expecting the same sort of twisted horror that I had read from Mr Parent previously.

What I got instead was what I would best describe as a thriller. A thriller with a difference though. A thriller with a supernatural element to it. A thriller which was beautifully crafted into a story that will delight both thriller lovers and horror lovers alike. So, although I was disappointed that this wasn’t an out and out horror story, after finishing this book I have to say that if proof was ever needed that Jason Parent can write stuff other than twisted, horrific tales…..this is it.

Characters wise there are a few in this tory but it mainly concentrates on Sam, Michael, Tessa and her father. Sam is brilliant. She is a cop who likes results. Sometimes she doesn’t use normal methods to get the results but you have to admire her for that. She’s a good cop and a good person and you can’t help but like her and root for her. Michael is a fourteen year old boy who has had a traumatic past that he isn’t even aware of. The visions scare him to the point where he doesn’t even want to touch people because he doesn’t want to have them. He soon learns to embrace the visions and use them to his advantage. Tessa was harder to figure out for me. She is mixed up in something that she has no control over. Or does she? I couldn’t help but think Mr Parent was leaving this character open to our own interpretation rather than telling us how to read her. Her father is just an absolute 100% (insert expletive here). A totally horrible individual for one hundred different reasons. I don’t want to tell you exactly what he is like because I would need to give away some of the plot.

When these characters all come together, they blend together so well. Their paths cross for most of the book and they all fit their individual roles perfectly.

In terms of the plot? It’s been done before. Killer on the loose. Someone with a gift can see what’s going to happen next. Cops chase bad guy, get him and everyone lives happily ever after. Jason Parent has added something different to this story to keep you glued to it. I like to call it ”haven’t got a clue where the hell this story is going to end up-itis”.

You sort of know what is going to happen but you cannot in any way shape or form predict how it is going to get there. The plot changes directions more times than me listening to a Chinese speaking sat nav. You think you have it figured out. You think you know exactly what will happen next. In reality you have no idea. This is what makes this book for me. The unpredictability of it.

I was kind of surprised by this book to be honest. Like I said before, I was expecting the twisted horror story. When I realised I wasn’t going to get that, I switched mood to fit with the book and I have to say in terms of the thrillers I have read this year, it is up there with the best.

The pace is perfect. Fast and free flowing from start to finish. There are only one or two parts where you can sit back and catch your breath before it hits the gas and takes off again. It is very easy to read. No big complicated sub plots. No long drawn out sections where you spend unnecessary time learning about the characters past lives that won’t add to the story. It doesn’t need any of this. It has all it needs to keep you glued to the pages and give you the adrenaline rush that a thriller should but, sadly, a lot lack. Also, giving the fact there is the supernatural aspect of Michael’s visions, it is believable. You don’t read it thinking “yeah right that would never happen”. You believe every word of it. Obviously there are murders. Obviously there is blood. Obviously there is one particular murder that I really want to tell you not to read about while you are eating.

Jason Parent has an undeniable talent for writing. I love his style. It’s laid back but one hundred miles per hour at the same time. It’s uncomplicated, making the words just flow across the page. It’s good fun.

To summarise: a thriller with a supernatural twist. Superbly fast paced from beginning to end meaning you will not want to put it down. A plot that will keep you guessing to the very end but not in a confusing way. Brilliant characters that gel together perfectly. A bloody good book. Even though it’s not a horror.

I would say there is scope for a continuation of this story. I really hope he does that. I think this could lead to a very successful series for him.

A Damn Fine Read!

This book was a police procedural/thriller/psychological horror story-it doesn't neatly fit into any category except for: "damn fine read".

I usually don't get into the plot too much, since the synopsis already does that, but (briefly)- this is a story about a "hard as nails" police detective, (Samantha), who helps to rescue a boy, (Michael), from a murder scene and then kind of keeps an eye on him as he grows up in the foster family system. Fast forward to his early teens and the discovery that when he touches certain people, he sees visions of their deaths and the visions come true.

As we've seen in stories like The Dead Zone by The King, people that have these kinds of visions rarely do well and young Michael is no exception. What happens when he sees in his visions a young girl about to kill her father and another where Samantha, the only stable thing in his life, is about to die? You'll have to read this book to find out.

This story had excellent pacing, great characters and moments that were truly chilling. I think where Jason Parent's writing really shined was in his description and characterization of the villain, Christopher Masterson. This dude was a bad guy in every sense. I've read about a LOT of bad guys, but this one was right up there with the worst deviants of all time.

The only issues I had with the story were with believability-there were two sections where I think my suspension of disbelief was stretched to the max. I'm having a little trouble overlooking them, so I deducted one star as a result.

Overall, this was a fun and suspenseful thriller and one that I have no trouble recommending to fans of such. Jason is a good author and I can't wait to see what else he has in store for us in the future.

Recommended to fans of thrillers and psychological horror!

How could a Detective not have better foresight?

I am shocked at how many five stars this book has garnered. It's incredible reviews in both Amazon and Goodreads pushed me to read this thriller and now I'm so incredibly disappointed in wasting two days. Don't get me wrong, Mr. Parent can write. He makes even grizzly brutality easy to digest. The problem with this book was a few unbelievable behaviors of Sam, the homicide detective working the case.

To me, it seems colossally inept to try and get the young friend of hers (a fourteen year old psychic who can see the future) to "see" the brutal murder that she's working on, especially since the boy knows the victim!

There were also other moments that I couldn't overlook. Unfortunately, if I describe the detective's ridiculously stupid oversights I'll ruin the book for anyone who reads it, I don't do spoilers. Let me just say that if the police had this much missing foresight no major crimes and criminals would ever be caught because no victim would ever be alive long enough to testify at trial. So, unlike everyone else who has read the book I'm giving it only two stars. If the mistakes weren't there, it would have been a five because of the great writing.

About the Author
Janette B. Benson is an Associate Dean, Morgridge College of Educationan and Associate Professor in the Psychology Department at the University of Denver. She recently served for five years as the Director of the University-wide Office of Academic Assessment and co-chaired the successful University reaccreditation. Dr. Benson’s expertise is in cognitive and sensorimotor development in infancy and early childhood, and her research has been funded by the National Science Foundation, the National Institutes of Health, The MacArthur Foundation and the March of Dimes. Dr. Benson has published several articles, book chapters and has edited or co-edited several books, including The Encyclopedia of Infancy and Early Childhood Development. She has been the recipient of several awards and honors, including the University of Denver Scholar - Teacher of the Year (1993), the 2000 CASE Colorado Professor of the Year, a Carnegie Scholar, a Fellow of the Association for Psychological Science, member of the Board of Directors of Shortridge Academy, and the serial editor of Advances in Child Development and Behavior.

Marshall Haith is the John Evans Professor of Psychology at University of Denver. He has also been an NIMH research awardee, director of research at University of Denver, and Guggenehim fellow and visiting professor at University of Geneva, Switzerland. A fellow of the American Association for the Advancement of Science, American Psychological Association, and the Center for Advanced Study in the Behavioral Sciences, he is a member of the Society for Research in Child Development, the International Society for the Study of Behavior Development, and the International Conference for Infant Studies. Formerly the associate editor of the Monographs for the Society of Child Development, he has served on the editorial board of nine scientific journals relating to infant development and behavior. Recipient of the APA G. Stanley Hall Award for distinguished contributions to developmental psychology in 2000 and the SRCD Distinguished Scientific Contribution Award in 2003, he has authored 10 books and over 75 peer-reviewed scientific journal articles on infancy and early childhood development.
